Phantom Data Useage

I am using a Verizon MiFi for my work internet because I live in a rural area. I have one device connected to the hotspot and that is my computer. Each day, I run my Activity Monitor to see how much data is being sent and received by my computer and I compare that to what is being reported by Verizon. 

Before buying the MiFi, I was using my phone's hotspot and regularly used about half a gig per day. Since switching to the MiFi, Verizon is regularly reporting that I am using at least triple that, and often much more. 

For instance, yesterday my computer reported that I sent/received a total of 600 MB. Verizon reports that I used 1.6 Gigs of data. The day before that my computer reported about 1 Gig of data sent/received, but Verizon reported 3.2 Gigs. Why such a big discrepancy?

When you were using your phone's hotspot, were you leaving the hotspot activated 24 hours a day? With the dedicated mifi, are you leaving it turned on and connected 24 hours a day or turning it off when you aren't using your computer?
