Around where I live, when I get full bars it just drops network connectivity almost completely. Doing a speed test, I'm getting ~10k. Less than old school dialup (14.4 was fast!). Nothing loads, can't make calls, etc.. This is even outside of a Verizon store! There are multiple towers in the area, but I do notice that it's near any tower that gives full LTE signal it just completely drops network connectivity. This is in multiple locations.
Any suggestions?

Is it possible you have your iPhone set to only be on 5G mode all the time, so when you're connected to a tower which only has 4G LTE, then it won't work?
I'm not a Verizon employee, just another customer trying to help.

Thank you for all these details. Please tell us, does this happen during specific times of the day? Is this impacting multiple devices? ~Geo
