Difference between the Nougat and Oreo operating systems?

I would like to know the key differences between these two operating systems.  I am looking to upgrade and I'm tired of Apple so I'm deciding between the Google Pixel 2XL and Galaxy S8+

You also have to factor in the differences between the Google UI and the Samsung UI.
