I sent a text message and a lock icon appeared in the recipient's message, what does this mean?

Great question! This would mean that the message or message thread is locked. Meaning the message can't be accidently deleted. You would have to unlock the message before it can be deleted from the device. Which model device are you using?

21 but only a couple contacts have this lock on all of their messages
