I currently have a prepaid plan.
Sometime later I'd like to change to a pay as you go plan.
Can I do this on line?

Here are the plan descriptions, on the Verizon website:
There are two general types of prepaid plans:
monthly plans:
plans for smartphones and basic phones that include a flat monthly access fee
and an allowance for minutes, text and data usage.
Pay as you go plans:
Daily or per minute plans for basic phones that let you pay for only the
minutes, text and data you use
I currently have a monthly plan, as described above.
Later, I'd like to change to a pay as you go plan, as described above.
It looks like the pay as you go plan would be postpaid,
but it's described as prepaid, above.
Unless that refers to a prepaid phone?

You are required to use the monthly prepaid plans if you have a smartphone. The "Pay as you go" plan is for basic phones only.

I believe you can switch to Pay as You Go from Monthly Prepaid. Pay As You Go | Verizon Wireless
Using a smartphone on this plan maybe isn't the best choice. You could run into a lot of usage charges. Monthly might be the most cost efficient path.
