I can't imagine that it is still 'rolling out'. What am I supposed to do to get my update from Verizon?

Have you tried to manually check for it in the phone's settings?

I have checked every single day and even got a new sim card. When I checked it comes up with 'service unavailable'.

1st off its not Verizon holding the update
2nd Have you tried calling Samsung and having it pushed
3rd have you tried going to store and having phone flashed
4th there are still people just now getting the update i have 2 S3s mine got the update as soon as its was available but my sister just got hers last night so be patient my friend

I took the phone into Verizon because I felt that there was something wrong since it was coming up "service unavailable". They claimed it was fine. They gave me the new sim card anyway to make me happy.
I have been and will continue to be patient, but it just seems ridiculously long for this to take so long to go out.

the "service unavailable" is definitely an issue. this happened to me on my tbolt a year ago. there was a work around (a very odd one) that required me to force it from 3g/4g to 1X. as soon as i did, it found the update and downloaded it (for nearly an hour on 1X....lol). i would try a factory reset unless you can find a way to force it to 1X (you'd need an app or the advanced menu # to dial) and try.

Keep trying. I was getting the "service unavailable" every time I tried each day, even earlier today. I tried about an hour ago again and the update was suddenly there.
