Is there a simple way, or for that matter a way at all to put my contacts in a last name first format?

Sorry not that i know of. Unless you make the changes on your google contacts account after exporting to csv file switch the column and then re-import and sync. of course this would only work if you have your contacts synced with google and not stored on the phone.
