Dependent on the keyboard you are using:

Settings->Language and Input   Press the gear next to your default keyboard and look for option to turn it off, my default is Samsung Keyboard and has Auto Replace and Predictive Text.  Keep in mind this is for all applications not just texting though.

Settings->Language and Input   Press the gear next to your default keyboard and look for option to turn it off, my default is Samsung Keyboard and has Auto Replace and Predictive Text.  Keep in mind this is for all applications not just texting though.
