Is there any way to edit the speed dial for voice mail to add my password?

You also could try going into your Call settings, then Voicemail settings, and edit the voice mail number by adding two commas (for pauses), followed by your password.
I've tried to edit the call settings, but it doesn't seem to allow me to edit the voice mail number. On all my previous phones it was a piece of cake, but on this Note 3 it seems impossible.
How about creating a separate Contact for voicemail and save it there instead.

Creating another contact and saving it as a speed dial will work, but I would prefer to find a way to edit the actual voice mail speed dial so I can just tap the icon and get to the voice mail. This was easy to do on all the other phones I have ever owned.
Second level support at VZW solved the problem. From the phone screen, go to 'call settings', scroll to 'voicemail settings', click on that and edit the number.
