My screen is pink. I turn the red all the way down and it is still pink around the edges. I can not view white screens as this upsets my eyes. Can i just go in and exchange my phone since I am not happy with it?

I see this as defective, no matter what Samsung says. Within the first 14 days you can exchange a defective phone. It does have to be processed in a way to correct the ESN/IMEI.

The IMEI is the device ID or serial number. However, there was a known problem with some Galaxy S8 phones having a red tint to the screen that was supposed to be resolved by a software update. You may want to try doing a software update on your phone before returning it, though you certainly have the option of returning it either way.
If you wanted to attempt the software update, you can do so by going into the Settings on the phone, scrolling tot he bottom, and selecting "System updates," then "Check for system updates."
