new s9 and I have a silly doughnut picture next to my user name. There doesn't seem to be any way to remove it. I do not want to share my profile with other users.

Updates are meant to enhance. The pink doughnut is a default profile picture set by the manufacturer. You don't have to share a picture of yourself but a photo or icon does need to be used.
Simply follow these steps to change the icon:
Go to your profile.
Select Edit.
Select profile picture.
Select 3 white dots.
This will allow you to change the icon.

try to remove it from your contacts on a pc or mac!!
