I'm not entirely sure what you did to turn off effects, but you'll need to...
1. stop playing your audio file
2. press menu
3. select more
4. select settings
5. select Equalizer
6. select Normal
7. press the back button (the looping arrow button)
8. select Effect
9. select Normal
That should do it. When you press the 5.1 button after doing that, you should get a slightly different sound that sounds more like 5.1.
