Do you use megabytes when playing games you download from market? Does it go against data plan if you dont have unlimited?

It all depends on the game. You should have read the autorization page when downloading the game from the market and see if it asking for a network connection. If it is then it is going to "eat" some of your data (whatever you have limited or unlimited data plans). Games that are asking permission for data usage are more often use that to download commercial on your phone. Should you don't like that to happen, you may want to opt for purchasing a paid version of the game (without the commercial and therefore without usage of the data).

Yeah, most any free game is going to use data just for downloading the ads it displays. Some games also offer online scoreboards, this will use data, and still other games offer various forms of online interaction with other players, this will use data. Basically anything that uses the internet uses data. If you want to avoid using data while playing a game that uses it for ads, such as, for example, Angry Birds... put the phone in airplane mode before launching the game and don't turn it off until you close the game.
