I have a Galaxy S 10.
How do I select/configure my phone to notify me when an Android o/s update is available versus the phone automatically updating (sometimes in the middle of the night)?

Settings > Developer options > Turn off Auto update system.

I would want to ensure I get notified for a new update too, Karaptian. Klue is correct, and you will still receive a notification when a new update is available when the automatic update is disabled. Does this help answer your question? Were there any other questions or concerns you have for us?

If you don't have Developers Options listed do this to get it.
1. Settings
2. About Phone
3. Software Information
4. Build Number
5. Tap build number 7 times
6. If it asks, enter device pin or password
7. Back to settings screen you will now see “Developers Options” below “About Phone”

Yes you will be notified of any updates and then you will be asked to schedule a time to install it.
