How does texting work if you're on Wi-Fi?

The county I live in has already been declared a disaster area for the upcoming solar eclipse on April 8, as we will be in the path of totality and crowds are expected. With every wireless carrier here likely to get completely slammed and me being a prepaid customer, I'm quite in danger of losing service entirely due to extreme network congestion. So my question is: While one can use Wi-Fi on modern smartphones for calls and internet access, how does texting work? Or can it, because texts still have to go through an SMSC?
