The only two channels I really want that FIOS doesn't have yet are:

NASA TV. 

It is offered free to anyone so the only reason to not show it is because they can not make the almighty dollar off this channel.  Even though it is widely requested I don't think Verizon cares enough about the people to do a public service offering like that.

One channel that comes to mind is...

White Springs TV (soon to be known as The Golden Age of Movies Channel).

They play classics (along the lines of Turner Classic Movies) from the Golden Age to modern movies (1930s to current).

Every soccer fan in the US will want to have Fox Soccer Channel (FSC) in HD as soon as it is broadcast (Q1 of 2010).  It would be important to have it as soon as it is available because it's release coincides with the start of the knockout rounds of the UEFA Champions League (the biggest soccer tournament outside of the World Cup) in HD.
