I want to change the phone number my tablet is synced to for messaging.

On your phone, go into the Messaging app, tap the three lines in the top LEFT corner, scrolldown to Advanced > Settings, Then scroll to Manage devices - there you can disconnect the tablet for that syncing to that phone.
Once it's disconnected, you can reconnect it to another phone number. It's probably a good idea to go into app settings on the tablet and clear the data for the messaging app before trying to sync with another number.
