I understand that if I don't take the premium cloud storage account, only my contacts will be stored on the cloud. But what remains stored on my phone? And how much (i.e., how many photos)?

You can store whatever you want on your phone, assuming you have the storage capacity. Which phone do you have? There also are other cloud-based storage options, such as Google, Microsoft, and DropBox.

If you have an Android, an option is to ensure that your photos are being backed up to Google Photos, i.e., open the Photos app, tap the Menu (the three bars in the upper left-hand corner, tap Settings, tap Backup & Sync and ensure it's toggled on (I'd also ensure that backing up over cellular data is turned off, i.e., only back up when on wi-fi).
