If I deleted texts today or yesterday and wasn't already signed up for the cloud...if I sign up for it now will I be able to get those messages back still?

Hello 1laurent! Once messages are deleted they are not able to be recovered unless they were already backed up somewhere, so no, this would not get the messages back.
