I'm going to be traveling in Brazil for three weeks. My phone will not be receiving text messages or calls during this time because I don't want to pay the excessive roaming fees. Through Google Voice I can get my voicemails forwarded to my email account, but is there a way to automatically get my text messages forwarded to my email account? Or do I just have to wait and let them build up for three weeks until I'm back in the states where I can check them?

Since text messages are sent to the device and the apps that can transfer them has to have the messages sent to your device first, I do not think that it is possible to transfer the text without allow the phone to receive them first... You can text and receive from Verizon's web base service but this only works while you are logged into the site.
