I was told if I transfer my personal phone number to my tablet that I could use verizon messenger to receive and make text messages. As if I wasn't missing my personal phone at all. The only bad part is that now that the number is ported to the tablet, when asked to send a verification text to the number I want to use on the app, I can't get the code since the phone number is currently registered to the tablet. How do I bypass this?

I think you misunderstood. A tablet cannot use it's assigned number for sending and receiving text messages. It will use a PHONE line's number for that, with the messages being sent and received on the tablet as if it was the phone. Someone receiving a text will receive it from your phone number, not the number assigned to the tablet.
So you set up the app on the tablet, and tell it the PHONE NUMBER of the phone to sync with - a text is then sent to that phone to verify that it's OK to sync. Then any texts sent to the phone will be received on the tablet as well, and you can respond. So if you can "unport" the number back to your phone and try this again, I think you'll get the results you want.
I'm not sure how you ported the number to the tablet - the two lines have different requirements - is your tablet # now your phone's number? Can they switch them back?
