Alicia's response is accurate and inaccurate at the same time.
When you start a new conversation with someone for the very first time,you cannot add a Subject.
However, you CAN add a subject once A message is in a conversation:
open theconversation
select the conversation menu (3dots) (see image below)
select 'add subject' - The Subject will be added to the message bubble.

Help is here! Making sure your texts are sent out how you want them to look is important. With the Verizon Messages app, the subject line function is not available. However, if you use the stock text app on the phone, you will be able to add a subject line. What make & model phone do you have? Once I have that bit of information, I can provide you the steps to add the subject line. Thanks!
