Why are some of my messages 'stored' and I don't get them hours later? Like for instance, my sister sent me a message (all kinds of messages: text, pictures, media) at 11:48pm and it was 'stored' until 3:06am and that is when my notification went off. Why is that? Do I have to set something differently? This happens to her as well. We both have the enV3.

First: Your both in the same timezone?
If you are, it may be a delay on the servers. I saw nmchilieman posted that there is a current issue going on nationwide causing texts from other carriers to either never arrive or are majorly delayed.
If you are not in the same timezone, than that is why the timestamps are a bit off.
We are in the same timezone and for that matter, same cities, even and both with Verizon.
