I was texting with someone on the verizon text app and they were using their Verizon text app too. They were not one of my phone contacts. They added me to their contacts and then their name came up on the top of the texting page and I didn't add them. Is this normal?

Interesting. Maybe since they added you as a contact, the Message+ app on their device shares their name in a field in the text messages with contacts.

I know That Its because there a customer with verizon and they put their texting profile as public so you can see it

I would be intrigued as well if I did not add someone as a contact, but their name comes up. This is actually normal if both users are using Verizon Messages+.
