I reviewed my bill and saw that my child has sent and received numerous pictures, but there are none saved to the phone itself. Does Verizon have somesort of database where these are stored and I could see what was sent and received? Or am I just limited to knowing who they were sent to and when?

Unfortunately you are limited only to knowing who they were sent to and when. There is no current way to view these online or request them from VZW.
