If you have not taken the precaution of backing them up, you don't.

Lets get those text messages restored! Rcshnoor is correct. You would need them to be backed up through an application so that they can be brought back. Do you use Verizon Messages or another 3rd party app that does that? If so, you should be able to access them through that application.

Does what work for pics? If you have your pics backed up by some method, then yes you can retrieve them if you delete them off your phone.
