All I do is message. If my text messaging didn’t work as intended, I may as well have no phone. I understand how important this is to you. I’ll be more than happy to assist you. When did this issue start? Had anything changed on your phone around the time this started, e.g., software update, new app installed, phone damaged, etc. What messaging app are you using?
One way of activating the scheduled message feature is by long pressing the send arrow, that may be what you are doing without realizing it. A short tap will send the message immediately, press and hold to activate scheduling. Try sending a message by quickly tapping on the send arrow and see if that is what may be happening.
