My son is eating up all of our data on youtube. How do I block youtube on his Galaxy S5?

Consider Verizon FamilyBase: Verizon Family Base and Usage Controls | Verizon Wireless

FamilyBase comes as an additional $5/M on the bill, but will allow you to restrict their ability to cause overages on your account starting at $10-$15/GB.

Be sure that your son is using WiFi whenever possible on their device.

Use the Data Usage setting on the phone to restrict the total amount of data allowed on the line and use the additional options to restrict the background data to wifi only.
