When listening to voicemail messages the system gives me the date and time the message was left, phone number it came from, and the duration before playing the message - Can I turn this off?

Yes, you can turn it off - it's one of the options in your Voicemail setup - at the initial prompt, choose 4 for Personal options, then the following sequence:
2 - Administrative options, then
4 - Envelope options and toggle them OFF.
