So, I don't have to actually do anything to use my phones in Mexico? They'll work just like here in the US and I'll get charged $2 per day?

It depends on your plan.
The New Verizon Plan XL+: This includes Canada/Mexico for no additional charge. If it is Large (8GB) or less it is not included.
If you do not have the above plan, you do need to add TravelPass $2/day, the $40 International Travel 100MB/MIN/MSG feature, or the $85 International Travel 250MB/MIN/MSG. Remember all these features are single line only. They do not stack.
After you setup your international billing, you do need to setup the device for roaming.
For Android:
Settings>More/More Networks>Mobile Networks>Global Data Roaming Access>Allow Access for All Trips
Settings>More/More Networks>Mobile Networks>Preferred Network Mode/Network Mode>LTE/GSM/UMTS>Automatic
iOS:
Settings>Cellular>Cellular Data Options>Roaming>Turn Data Roaming ON and International CDMA OFF>Restart Phone

Did you add the Travel Pass feature to your line?
I'm most definitely NOT a VZW employee. If a post answered your question, please mark it as the answer.

That must be why I got the message that my phones are ready and will operate.

There are a few SMS that you can receive from VZW....
"Welcome to Mexico. International features are inactive. You may not be able to place calls.": This means you have NO international features nor International Services Enabled! You must call and add something.
"Welcome to Mexico. Rates are $0.99/min $0.25/sent $0.05/received, $2.05/MB": This is a generic text. This does not mean you don't have a feature. Go by what you called and added.
"Welcome to Mexico. Want to use your data for only $2/day? Reply YES if so" This is if you are in Mexico, with no international feature but with International Services Enabled, in a country that supports TravelPass, and a device that supports Travelpass.
