I'm using Verizon Webmail. When I open an email in my Inbox, I can't see who else was copied on the email sent to me. How do I show them? The online help says there's supposed to be a carrot (>) next to the subject line, but it's not there.

If you open an email there should be an option to "show details" If you click this link do you see the information you need? (you may have to press the arrow down button on the far right to see CC addresses)

Mail headers that are included in your mail do not have to show recipients at all. THe actual receipients are sent outside the envelope. Normal email headers will repeat these for TO: and CC:. Also if BCC (blind CC) you don't see the haders.
