My basic phone recently stopped working, and I have an old Samsung Galaxy S that I would like to use. I can upgrade my phone in May, and at that time I'd like to upgrade to a smartphone with a data plan. Until then, would I be able to use the old smartphone?

All smart phones require a data package. If you never plan to use any data, get the 500MB data package which is the smallest.
You can use the phone as long as it is compatible with Verizon, that will not be a problem.
