I spoke to an Apple Support person who said the only way to restore my calendar data is if I had backed it up on my computer, which I had not. Will in the future though! Does anyone know how to edit/delete birthday calendar events? I forgot to ask him that.
You can view the instructions on how to edit a calendar entry on page 70 of the iPhone user manual.

Birthday calendar events can be deleted/edited by editing the contact info for that person's b-day. Otherwise, you edit manually entered birthday info on the calendar itself by clicking "edit" when you open the entry you want to change or delete.
