What should I do if I transfered content to the wrong device?

I bought three iphone 5s' for my kids and myself.  Got just one on the first shipment.  I transferred all my data on the old phone to the new.  Realize later the phone was already programmed to my son's number. Now I can't reset the settings without a restrictions passcode which when I put it in....it rejects it.  Do I just do the restrictions passcode until it erases the phone?

I would just keep that phone for you.  When the other phones arrive, find the one that has your number. Then just switch the SIM cards and voila, problem fixed.
