I want to know if it is possible to render the Iphone5 to just a phone and not a smartphone.

If you mean, can you activate it and use the phone without activating a data plan, the answer is NO.  The iPhone5 is a smartphone, and requires a data plan to use it on any cellular network, Verizon or otherwise.
