why, all of a sudden, my email address appears instead of my phone number on imessages@

Hello jennejo68! I can certainly help you get your iMessage settings corrected! Please go to Settings > Messages > Send & Receive > and make sure under "Start New Conversations From" that your mobile number is checked off and not your email address. Power off phone fully till you see Slide to Power off. Please keep us posted if that corrects the issue. Thanks so much!
