I was looking to upgrade to an iPhone 6 128GB. If it turns out that I don't like it but want to give it as a gift, would I be able to deactivate it and reactivate an old phone? Or would I be stuck with it for two years with no chance of being able to get rid of it?

Yes you can deactivate it and use your old phone but you will still be under the new contract (if you didn't pay full retail).
