I have not been able to get my emails on my phone. I get a message that says the mail server "imap-mail.outlook.com is not responding. Verify that you have entered the correct account info in mail settings. Where do I go to do this on my phone. Thank you.
Have you tried removing the account from the phone and setting it up again?

Golfinggranny, we want to ensure you can receive your email as needed. I welcome the opportunity to assist you with this matter. You can update your incoming server settings for your email account by going into Settings>Accounts & Passwords>Tapping on the respective email account you're not receiving messages from and then clicking on the Account Name once more. Then, choose Advanced Settings and make any necessary changes based on your outlook email options. If you have any issues with those settings, you can delete the email account and re-add it as Ann154 has suggested. I hope this information helps.
