No changes to our phones, everything has been working perfectly... suddenly getting a no sim card installed message and can't call or send texts. Ideas?

Try taking the SIM card out, waiting for a few minutes, and then reinserting it. If that doesn't work stop by a VZW corporate store to pick up a new SIM card.

Agree with kaebfly. While you have the SIM card out, rub the metal contact points on the card with a microfiber cloth before putting it back.
