How can I copy photos from my iPhone 8 to my PC without using iTunes? I don't know it they backed up to the cloud and don't have a password for that anyway.
Lost-here, saving those precious memories is important. Typically, you can back up via iTunes or iCloud. I see you mentioned you don't have the password. If you are referring to your Apple ID password you can learn how to reset it here https://support.apple.com/en-us/HT201487.
