Wifi High Latency Issue

I recently got a new CR1000A router from Verizon. I have the 2.4GHz and 5Ghz WIFI radios turned off so that it's only using 6Ghz. I have SON turned off.  My PC is connected directly to it with an ethernet  cable and I connect my Quest 3 to it via WIFI to play PCVR games from the PC. I get a great connection with bitrates between 1700 & 2400.  But about every 10-15 minutes the latency suddenly sky rockets to 300ms making the VR unusable. I even tried disconnecting all other ethernet cables, including the WAN line from the ONT as the internet is not required to play PCVR. Is it just an unreliable router or is there some setting I can change to ensure a steady connection as its the only device connecting to it and no other WIFI networks were on in my house during this test. I also used an app to confirm no other 6Ghz signals in the area that might cause interference.
