Does all data transfer if I trade for a iPhone 6s from a 6......photos, contacts, text messages, notes
IF they are selected for back up, yes.
For a big move like that, I would back up the older phone to iTunes on a computer. Then you set up the new phone as "new with the back up from...."
It will set up the new phone exactly as your older one.
Transfering content is key bondo1, we can't live without our pictures. If you are using iCloud or iTunes to back up your data, then yes your information will transfer.
