What is the range for one of these and how many laptops can be connected to it? It is going to be used as a temp setup in a office building until fiber optics are installed. Can a extender be added to it?

The range is going to depend on the construction of the building. Hard to say without just turning the thing on.

The default subnet size supports 253 devices. DHCP should be configured for 100 at the minimum. Wi-Fi will likely not support that many devices being connected to a single piece of  hardware comfortably.

You can connect access points or extenders to the router. Just be aware, if you plan to use Wireless backhaul for the extenders, you'll need to set the Verizon router to use fixed Wireless channels (disable auto channel selection), and also disable SON.
