I saw an old post indicating that Fios channel requests could be posted on the "Idea Exchange," but since Verizon canned that board, where is the best place to post such requests? Has anything replaced the "Idea Exchange"?

This is mainly a peer to peer support forum.
Verizon doesn't routinely monitor.
So for now, there isn't a good place to post channel requests that Verizon will take action on.
