cat 7 is pure hype to grab your money. Fios has used cat5e for quite some time and now are using Cat6
the equipment you are referring to is called an ONT (Optical Network Terminal) this box can be opened with a 1/4 wratchet bit. However leave the Verizon side alone since if you break anything Verizon will charge you for the visit and damages.
