Verizon presents itself at the cutting edge of broadband technology. Yet my Fios Gateway router does not allo that I change the username from "admin." It is unsafe and unsecure.
How can the consumer be sure that Verizon is a reliable steward of our privacy when this most basic security practice is not being enforced to have non-standard usernames?

Agree 100%. This is a well-know vulnerability than even script kiddies can exploit. VZ should allow changing this to user-defined name and disabiling the admin account unless the router is reset. This should be standard practice on ALL such devices.
