I just dropped FiOS TV and the new deal they offered includes Gigabit Internet and home phone (which we need for the alarm system and business phone). VZ shipped a G3100, which I still need to install. This means I need to have the ONT switched to Ethernet. However:
I know it would be great to run Ethernet everywhere, but realistically, that isn't going to happen. VZ says they will monitor my wireless coverage for 30 days (oh, great, they are monitoring me) and see if they need to send an extender for free, but in the meantime, we need reliable Wi-Fi for work.
I'd appreciate any ideas on how to manage this new setup. Thanks in advance.

WiFi is not going to be as reliable as a wired connection. Always Ethernet or fiber if you can, or use coax as a backup choice.
You should recycle all MI424WR as they are EOL and EOS, and continue operation is a security risk. Typical consumer routers do not have a MoCA Ethernet bridge. To use the Asus router with G3100 via MoCA, you need a MoCA Ethernet bridge. For example, MoCA Ethernet Adapter sold by Verizon for $99 including shipping.
Since you have dropped Fios TV, there's no need of a coax cable from the ONT.
