What will happen to my Guest network if I enable SON on FiOS Quantum gateway?

Does SON work with the FiOS Quantum Gateway's "Guest" network?  Will anyone logged into that network have to connect to a new network if SON gets enabled?

No. The guest network only works on 2.4 GHz so it will stay the same.
