I would like to sign up a fios triple play deal online. However, it does not allow me to choose to port my oldphones number. I chatted with VZ agent and was told I can call later to port it. But I saw discussions that it is very hard. My number was assigned by VZ 20 years ago and then ported to a VoIP company. Can it be done? How? I definitely don't want to change my number.

It can be done quite easily. That's exactly what I requested when I switched to FiOS Triple Play. However it cannot be done with a purely online order. You must place the FiOS order directly with a CSR on the telephone.
One possible complication with this method is that specific offers and promotional pricing plans are sometimes only available with online orders. Placing the order on the telephone disqualifies the promotion. That may or may not be the situation for you.
