I have not used my Ellipsis 8 tablet in a long time. Just recharged and when I try to update, it says cannot connect to server even though I am hooked into my home wife. I did drop the line that it used as I did not need to pay $10 per month for a line that was redundant since I have a cell phone.

Maybe you need to disable a setting that tells it to try to connect to the cellular network?

The Ellipsis tablets won't update over wi-fi, they need a cellular connection. When did you last use/update it? You may not be missing any updates; the last update was 5/18/16:

My google play store will not open either, getting same cannot connect message. Many of my apps need updating and cannot because of same error message.

Have you tried turning off the tablet and back on again? Have you ensured that you have a strong wi-fi connection? Have you tried 'forgetting' the wi-fi connection and re-establishing it?

dnagiles, making sure you are aware of your options to process a Software Update on your device is important. We recommend that you remove the SIM Card from your tablet in order to proceed with the update. I understand not wanting to pay for a device on your account that you were not using jnagiles. I would try removing the wifi connection and setting it up again. You can click the troubleshoot tab on our website via the link below.
If you continue to have issues after both steps above are completed, the last step would be a factory data reset.
